Based on a mean of history/legends/culinary preferences/animal farming/other criteria that you can think o,f would it be possible to associate a certain animal to each country? (let’s say Europe for a start) A sort of a “national” animal.

Our project looks specifically at contemporary British English language data, so unfortunately we don’t have access to data deriving from history or legends or the other kinds of sources you identify, and because our texts derive from this country (UK), we can’t say much about other nations. I’m sorry we can’t be more informative, but there’s no doubt some scope for a different research project that could answer this question!
